Das Bundesgericht zieht in Erwägung:

Das angefochtene Urteil ist vor dem Inkrafttreten des Bundesgesetzes vom 17. Juni 2005 über das Bundesgericht (BGG) am 1. Januar 2007 ergangen. Auf das Rechtsmittel dagegen ist noch das frühere Verfahrensrecht anwendbar (Art. 132 Abs. 1 BGG, e contrario), hier somit dasjenige der eidgenössischen Nichtigkeitsbeschwerde gemäss Art. 268 ff. BStP.

Die Beschwerde richtet sich ausdrücklich gegen das Urteil des Amtsgerichtsstatthalters von Olten-Gösgen vom 1. September 2006 (Beschwerde S. 1 unten). Gegen dieses Urteil war eine Appellation beim Obergericht des Kantons Solothurn möglich, welches Rechtsmittel die Beschwerdeführer denn auch ergriffen haben (Urteil des Obergerichts in Sachen der Beschwerdeführer vom 10. April 2008). Da der angefochtene Entscheid folglich nicht letztinstanzlich gemäss Art. 268 Ziff. 1 BStP ist, ist auf die Beschwerde im Verfahren nach Art. 36a OG nicht einzutreten.

Die Gerichtskosten sind den Beschwerdeführern aufzuerlegen (Art. 278 Abs. 1 BStP). Das Begehren um einen unentgeltlichen Anwalt ist als Gesuch um unentgeltliche Rechtspflege entgegenzunehmen. Dieses ist abzuweisen, weil die Rechtsbegehren der Beschwerdeführer von vornherein aussichtslos waren (Art. 152 OG). Dem Beschwerdegegner muss keine Entschädigung ausgerichtet werden, weil er vor Bundesgericht keine Umtriebe hatte.

Demnach erkennt das Bundesgericht:

Auf die Beschwerde wird nicht eingetreten.

2.
Das Gesuch um unentgeltliche Rechtspflege wird abgewiesen.

3.
Die Gerichtskosten von Fr. 800.-- werden den Beschwerdeführern je zur Hälfte unter solidarischer Haftbarkeit auferlegt.

4.
Dieses Urteil wird den Parteien und dem Richteramt Olten-Gösgen, Amtsgerichtsstatthalter, schriftlich mitgeteilt.
