Der Einzelrichter zieht in Erwägung:

Der Beschwerdeführer wurde mit Verfügung vom 12. Mai 2011 aufgefordert, dem Bundesgericht spätestens am 3. Juni 2011 einen Kostenvorschuss von Fr. 2'000.-- einzuzahlen. Obwohl er die Verfügung in Empfang nahm, reagierte er nicht. Mit Verfügung vom 8. Juni 2011 wurde ihm die in Art. 62 Abs. 3 BGG gesetzlich vorgeschriebene Nachfrist zur Zahlung des Kostenvorschusses bis 29. Juni 2011 angesetzt, ansonsten auf das Rechtsmittel nicht eingetreten werde. Nach zwei vergeblichen Versuchen konnte die Verfügung dem Beschwerdeführer am 18. Juni 2011 zugestellt werden. Erneut reagierte er nicht. Da der Kostenvorschuss innert Frist nicht einging, ist auf die Beschwerde androhungsgemäss im Verfahren nach Art. 108 BGG nicht einzutreten.

Die Gerichtskosten sind dem Beschwerdeführer aufzuerlegen (Art. 66 Abs. 1 BGG).

Demnach erkennt der Einzelrichter:

Auf die Beschwerde wird nicht eingetreten.

2.
Die Gerichtskosten von Fr. 800.-- werden dem Beschwerdeführer auferlegt.

3.
Dieses Urteil wird den Parteien und der Anklagekammer des Kantons St. Gallen schriftlich mitgeteilt.
