in die nach Erlass der Verfügung vom 11. Januar 2011 betreffend fehlende Beilage (angefochtener Entscheid) und mangelhafte Beschwerde dem Bundesgericht am 26. Januar 2011 zugestellte Eingabe,

in Erwägung,
dass die Beschwerdeführerin den ihr vom Gericht gemäss Art. 42 Abs. 5 BGG angezeigten Formmangel der fehlenden Beilage (vorinstanzlicher Entscheid) nicht innerhalb der mit Verfügung vom 11. Januar 2011 angesetzten, am 27. Januar 2011 abgelaufenen (Art. 44 - 48 BGG) Nachfrist behoben hat, weshalb schon aus diesem Grunde ein unzulässiges Rechtsmittel vorliegt,
dass zudem die Beschwerde vom 8. Januar 2011 und die Eingabe vom 26. Januar 2011 den in Art. 42 Abs. 1 und 2 BGG statuierten Formerfordernissen offensichtlich nicht zu genügen vermögen (BGE 134 II 244 E. 2.1 S. 245 f.),
dass deshalb auf die - offensichtlich unzulässige - Beschwerde in Anwendung von Art. 108 Abs. 1 lit. a und b BGG nicht eingetreten werden kann,
dass es sich bei den gegebenen Verhältnissen rechtfertigt, von der Erhebung von Gerichtskosten für das bundesgerichtliche Verfahren umständehalber abzusehen (Art. 66 Abs. 1 Satz 2 BGG),
dass in den Fällen des Art. 108 Abs. 1 BGG das vereinfachte Verfahren zum Zuge kommt und der Abteilungspräsident zuständig ist,

erkennt der Präsident:

Auf die Beschwerde wird nicht eingetreten.

Es werden keine Gerichtskosten erhoben.

3.
Dieses Urteil wird den Parteien, dem Verwaltungsgericht des Kantons Bern und dem Bundesamt für Gesundheit schriftlich mitgeteilt.
