Der Präsident zieht in Erwägung:

Die Beschwerdeführerin reichte die Beschwerde bei der Anklagekammer des Kantons St. Gallen ein, worauf diese sie an das Bundesgericht weiterleitete. Das Bundesgericht teilte der Beschwerdeführerin diesen Umstand mit und machte sie darauf aufmerksam, dass die Eingabe ohne ihren Gegenbericht bis zum 26. Mai 2008 als Beschwerde in Strafsachen entgegengenommen werde. Die Beschwerdeführerin hat sich nicht gemeldet. Folglich ist die Eingabe als Beschwerde in Strafsachen im Sinne von Art. 78 ff. BGG zu behandeln.

Die Beschwerdeführerin wendet sich gegen das Urteil der Anklagekammer des Kantons St. Gallen vom 8. April 2008 und somit dagegen, dass in Bezug auf eine von ihr sinngemäss wegen Amtsmissbrauchs eingereiche Klage insbesondere gegen den Präsidenten der Gemeinde A.________ keine Strafuntersuchung eröffnet wurde. Die Beschwerdeführerin ist indes weder Privatstrafklägerin noch Strafantragstellerin. Sie ist auch nicht Opfer im Sinne des Opferhilfegesetzes, da sie durch die sinngemäss angeklagte Handlung des Amtsmissbrauchs nicht unmittelbar in ihrer körperlichen oder psychischen Integrität im Sinne eines traumatischen Ereignisses beeinträchtigt wurde (BGE 120 Ia 157 E. 2d). Folglich ist sie als Geschädigte zur Beschwerde gegen das angefochtene Urteil vom 8. April 2008 nicht legitimiert (Art. 81 BGG; BGG 133 IV 228). Die weiteren Ausführungen der Beschwerdeführerin zum angeblichen jahrelangen Rufmord durch Aa.________ und Ab.________ sind nicht sachbezogen und gehen am Gegenstand des vorliegenden Verfahrens vorbei. Auf die Beschwerde ist im Verfahren nach Art. 108 BGG nicht einzutreten.

Die Gerichtskosten sind der Beschwerdeführerin aufzuerlegen (Art. 66 Abs. 1 BGG).
Demnach erkennt der Präsident:

Auf die Beschwerde wird nicht eingetreten.

2.
Die Gerichtskosten von Fr. 800.-- werden der Beschwerdeführerin auferlegt.

3.
Dieses Urteil wird den Parteien und der Anklagekammer des Kantons St. Gallen schriftlich mitgeteilt.
