Das Bundesgericht zieht in Erwägung:

Der Beschwerdeführer befindet sich im Massnahmenzentrum Bitzi. Am 9. Januar 2012 äusserte er wiederholt und sogar nach einer Abmahnung in unangemessener Weise Kritik an einem Mitinsassen, welcher für die Reinigung der Wohngruppe zuständig war. Er drohte überdies, den Streit handgreiflich zu regeln (vgl. im Einzelnen angefochtenen Entscheid S. 2 E. I/1 und S. 4 E. 4.1). Vor Bundesgericht beschwert er sich darüber, dass er wegen des Vorfalls mit drei Tagen Arrest bestraft wurde.
Der Beschwerdeführer bestreitet den Sachverhalt nicht (angefochtener Entscheid S. 4). Es ist folglich nicht ersichtlich, was er mit seinem Vorbringen erreichen will, in der Wohngruppe würden die Rapporte willkürlich und ohne Bedacht geschrieben. Jedenfalls ergibt sich aus der Beschwerde nicht, dass und inwieweit die Vorinstanz von einem offensichtlich unrichtigen Sachverhalt im Sinne von Art. 97 Abs. 1 BGG ausgegangen sein könnte.
In Bezug auf die Höhe der Sanktion kann in Anwendung von Art. 109 Abs. 3 BGG auf die Ausführungen der Vorinstanz verwiesen werden (vgl. angefochtenen Entscheid S. 5/6 E. 4.2). Da das Verhalten des Beschwerdeführers bereits wiederholt disziplinarisch geahndet werden musste, ist der Arrest von drei Tagen nicht zu beanstanden.
Die Beschwerde ist im Verfahren nach Art. 109 BGG abzuweisen, soweit darauf einzutreten ist.

Die Gerichtskosten sind dem Beschwerdeführer aufzuerlegen. Seinen finanziellen Verhältnissen ist bei der Bemessung der Kosten Rechnung zu tragen (Art. 65 Abs. 2 BGG).
Demnach erkennt das Bundesgericht:

Die Beschwerde wird abgewiesen, soweit darauf eingetreten wird.
2.
Die Gerichtskosten von Fr. 500.-- werden dem Beschwerdeführer auferlegt.
3.
Dieses Urteil wird den Parteien und der Anklagekammer des Kantons St. Gallen schriftlich mitgeteilt.
